Roasted Winter Squash with Toasted Coconut Gremolata

Sometimes it hits me that I read a lot of cookbooks. I love reading cookbooks. And cooking from them. Mostly I love learning new things ranging from the big ideas and amazing flavors to the tiniest details of cooking techniques. As I read my review copy of Dining In: Highly Cookable Recipes by Alison Roman, this fact that I read a lot about food became apparent because these vibrant, flavor-packed recipes brought to mind other similar dishes from other books. For instance, I knew the Blistered Green Beans with Creamy Tahini and Fresh Hot Sauce would be great because I’d previously tried the Roasted Green Beans with Tahini and Sesame-Seed Dressing from Brown Sugar Kitchen. The Grilled Corn Salad with Fresh Cheese and Corn Nuts took me back to the Corn, Green Beans, and Parmsesan Salad with corn nuts from Tartine All Day and the summer salad with corn nuts from Curate. Burrata with Tangerines, Shallots, and Watercress reminded me of how well citrus goes with burrata which I learned from trying the Blood Orange, Burrata, and Freekeh Salad from the book Citrus. Inevitably, food brings back memories, and flavors that pair well are seen together again and again. I’ve been eating smoked trout more often as of late, so the Smoked Trout with Mustard and Apples salad made with mustard seeds and frilly mustard green leaves looked delicious. And, the Skillet Chicken with Crushed Olives and Sumac looked like a fantastic result from not too much effort. The first dish I tried presented a new and different idea I’d never seen before. Toasted coconut chips became a central element in a gremolata for sprinkling over roasted winter squash. Turns out, I have added coconut chips to a winter squash salad before, but that was part of a very different dish and had nothing to do with a gremolata. 

Here, winter squash was sliced and roasted after being tossed with melted coconut oil. I used acorn squash, but delicate is shown in the book. For the gremolata, unsweetened coconut chips were toasted in a dry pan and left to cool. Chopped chives and cilantro leaves that I was able to harvest from my herb garden were added to a bowl with lemon zest, Aleppo pepper, and salt. The coconut chips were added and tossed to combine. This gremolata was sprinkled over the roasted squash pieces before serving. 

Winter squash and coconut go great together, and sweet potato wedges would be a delicious alternative as well. The lemon and Aleppo pepper added nice punch to the mix of flavors. It’s fun for me to connect the dots of ingredients and pairings that I encounter from book to book to book, and mostly it’s a lot of fun to eat what ends up on the plate.

Baked Acorn Squash Falafel with Almond-Milk Yogurt

When I receive acorn squash from my CSA, it takes me a few days to decide how to use them. My first inclination is always to roast and stuff the halves. But, a recipe in the September issue of Food and Wine gave me a delicious new idea that will work great for all types of winter squash. Baked squash falafel uses mashed, roasted squash in place of chickpeas, but chickpea flour is used to bind the mixture. The star ingredient here was the winter squash, and I get excited to use what’s fresh and in season from our local farms. But, for a recipe like this, it couldn’t have come together without a trip to the grocery store as well. Do you have strong feelings about grocery stores? I’m lucky to have great options for grocery shopping in Austin, and I’ve seen lots of changes to the grocery shopping scene here over the last couple of decades. What got me thinking about that is the new book Grocery: The Buying and Selling of Food in America by Michael Ruhlman of which I received a review copy. The book is a broad reflection on grocery shopping and how it has evolved from its beginning, but it’s also a look at what customers expect from grocery stores and how that changes with trends that come and go. I admit to feeling a little hometown pride in reading about the history of Whole Foods Market and how they were able to change the landscape of organic foods and what was available. They were able to buy enough from farmers for them to feel comfortable making the switch to organic, and they were able to convince beef suppliers to raise cows with no hormones or antibiotics. Because of asking for these kinds of products and having enough stores to sell high enough quantities, the market changed. Now, all grocery stores can carry organic versions of every type of food because more is being produced all across the country. My current wish is that this interest in organic supply would reach further into wine production. Another interesting, but unsettling to me, change in grocery shopping noted in the book is the rising demand for prepared foods. I find it sad to see this happen as more and more people place less priority on cooking for themselves. Ruhlman explains the details of how stores make these changes to what they offer and the challenges they face. As usual, his writing is full of insight and wit, and his personal experiences add to story being told. I might be one of the pickiest or most demanding grocery shoppers out there, but I do appreciate being able to find black and white sesame seeds along with chickpea flour, coconut oil, and almond milk yogurt, all preferably organic, all in one place. I definitely couldn’t have found all those things in one store if at all back when I first moved to Austin. 

To make these squash falafel, first the acorn squash was halved, cleaned of seeds, and roasted until tender. The flesh was scraped from the skins and mashed in a mixing bowl. Chickpea flour, chopped parsley and cilantro, minced garlic, ground cumin and cayenne, and lemon juice were added. The mixture was shaped into little balls that were rolled in the black and white sesame seeds before being placed on a baking sheet with melted coconut oil. The balls were rolled in the oil on the sheet pan and were baked for 20 minutes. They were turned halfway through baking, and the turning flattened the shape a bit. Almond milk yogurt was mixed with chopped mint and a little more lemon juice. 

I liked that with almond milk yogurt, this was a vegan meal. The herbs and spices flavored the mashed squash well, and the sesame seeds gave the falafel nice crunch. I garnished them with some pomegranate seeds that came from my own dwarf shrub. I love walking outside and harvesting edible things in my own yard and bringing home all the seasonal goodies from our area farms. But, I do hope our grocery stores continue to offer all the other stuff demanding shoppers like me want to cook with too.

Squash, Roasted Tomato, and Popped Black Bean Salad

It just happened again. You know when you pick up a new cookbook, start looking through it, and quickly realize you want to try everything you see? I do mean everything. Every page of A Modern Way to Cook: 150+ Vegetarian Recipes for Quick, Flavor-Packed Meals has something I want to try. This is the new book from Anna Jones, and I recently received a review copy. The recipes all offer fresh, pretty combinations that are plant-focused for eating well. The colors alone in the Bloody Mary Salad with Black Rice made with heirloom tomatoes, celery, and olives, drew me to it. And, the Avocado Fritters with a polenta crust just sound like a delicious idea. The convenient thing about this book is that the recipes are organized by how long they take to prepare. If you’re short on time, stick to the first couple of chapters, and when you’re planning a more elaborate meal look to the Forty-Minute Feasts. There’s also a chapter called Investment Cooking for things to make in advance like nut butters, homemade chickpea tofu, vegetable stock, dips, and more. Last, there are also breakfast recipes and desserts. I plan to try the Salted Almond Butter Chocolate Bars soon. I had two reasons to try the Squash, Roasted Tomato, and Popped Black Beans first. One reason was that I just received a couple of little acorn squash from my CSA, and they were perfect for this salad. And, the second reason was: popped black beans. I thought, what are popped black beans? I love all things popped. I’m a complete popcorn addict, I was delighted to try popped sorghum for the first time and have made it several times since, and I’ve experimented with popped amaranth with less success. But, popped black beans was new to me. A quick online search informed me that this is something that Jamie Oliver has included in a couple of recipes in the past, and I managed to never hear of it. I couldn’t wait to give it a go. 

To begin the recipe, the squash was sliced, tossed with olive oil and salt and pepper, topped with ground seeds from a cardamom pod, and roasted until tender. Meanwhile, cherry tomatoes were halved, tossed with olive and salt and pepper, and topped with grated fresh ginger. The tomatoes were roasted for the last 20 minutes or so of the squash cooking time. Just before the squash was finished roasting, the pan was removed from the oven and flaked coconut was sprinkled on top. The pan went back into the oven until the coconut was toasted. The dressing for the salad was a simple mix of yogurt, lime zest, lime juice, and ground cardamom with salt and pepper. And, at last, it was time to try popping black beans. Black beans from one can were rinsed and drained, and the beans were left to dry on paper towels. A skillet was heated over medium heat, and the dried beans were added. The beans were dry fried until the skins popped and became crisp which takes about five minutes. I sprinkled on a little salt as they crisped. The salad was served on a platter with the squash, coconut, and tomatoes scattered about. The beans were added on top, and the dressing was drizzled over everything. 

Now, first, I have to say that the “popped” black beans were tasty, and they’d make a great snack. The edges do become crispy, and that’s always a welcome texture. But, I’m not sure I agree with the name “popped.” The beans don’t transform the way a popcorn or sorghum kernel does. They just become dry and the skins crack. They do, however, work very well as one of the many varied elements of this flavorful salad. There was so much texture from the vegetables and the toasted coconut, and the flavors of cardamom, ginger, and lime combined nicely. Now, I have several more recipes to try from this book.

Spelt Salad with Squash and Fennel

In a rare instance of Kurt noticing what’s been happening in the kitchen, he pointed out that I’ve been making a lot of salads lately. It’s true. There was the Crunchy Corn Tortilla Salad the other day, a sesame soba noodle salad with cucumbers that I haven’t posted yet, and we have a big lettuce salad with hard-boiled eggs for dinner about once a week. At least there’s been variety among all those salads. And, the one I have for you today might not even really be a salad. It could function as a whole grain, vegetarian main course or a side dish, and you can serve it at whatever temperature you prefer. So, I don’t think this counts in the nothing-but-salads-lately tally. Besides, we’re at that juncture at which we still have plenty of summer vegetables showing up at the markets, and the fall ones are just starting to appear. Why not use them in all kinds of salads and dishes that may or may not be salads? This Spelt Salad with Squash and Fennel is from River Cottage Veg, and it is a lovely way to move from one season to the next. I used two cute, little acorn squash from our CSA. Other than the spelt which is cooked on top of the stove, everything else is roasted in one pan. The ingredients are added to the pan in turn in order of needed cooking time starting with the squash. The cooked, chewy spelt was mixed with the roasted vegetables, toasted walnuts, lemon juice, and parmesan to finish the dish. 

The cooking time for the spelt will vary quite a bit depending on whether or not you’re using pearled spelt. I did not use pearled spelt, and so it needed to cook for a little over an hour. Pearled spelt will cook in about 20 minutes. While it was cooking, the vegetables were roasted in a 375 degree F oven. The acorn squash, tossed with olive oil and seasoned with salt and pepper, went into the oven first and roasted for about 15 minutes. Then, two fennel bulbs sliced into thin pieces and some chopped garlic was added to the roasting pan which went back into the oven for another 15 minutes. Last, walnuts were added to the pan for ten more minutes of roasting. The cooked spelt was drained and transferred to a large mixing bowl. The roasted vegetables and walnuts were added to the spelt with the olive oil remaining in the roasting pan. The juice of a lemon was added with chopped parsley and shredded parmesan. 

This was delicious with the vegetables still a little warm from the oven, but it was just as good served chilled from the refrigerator the next day. The spelt makes it hearty and filling, but the lemon and parsley keep the flavors bright. This recipe was just one of several that piqued my interest from the latest River Cottage book, and lucky for Kurt, they’re not all salads.

Gingered Acorn Squash Soup + Book Giveaway

The new book from Louis Lambert, Big Ranch, Big City Cookbook: Recipes from Lambert's Texas Kitchens, begins with a discussion of chefs’ culinary styles. For Lambert, what he most loves to cook has everything to do with his upbringing in the West Texas town of Odessa and the kinds of food his family always brought to the table. Lambert graduated from The Culinary Institute of America and then worked in New York, Dallas, and San Francisco. It was in San Francisco at Wolfgang Puck’s Postrio where he had a revelation about cooking. He began to see that many of the dishes he prepared in this urban, refined restaurant were very similar to what he grew up eating on a Texas ranch. He knew he could recreate his favorite foods from home with a few new techniques to dress them up for restaurant dining. And, that’s exactly what he’s done at his restaurants in Austin and Fort Worth. I received a review copy of this new book, and I have great news for two commenters on this post. I have to mention what Robb Walsh wrote in the Forward of this book. His first introduction to Louis Lambert and his cooking was by way of an article in Martha Stewart Living in 1996. The article was about West Texas food and Marfa. I remember that article too, and I remember the recipes. I still have them in my files. The dishes in this new book are just as memorable. This is Texas food with some influences from Mexico here and ideas inherited from Louisiana there, and everything has been given some kind of fresh, new twist. The red grapefruit and avocado salad is reminiscent of Lambert’s grandmother’s salad from years ago, but here, it’s been updated with watercress, pine nuts, and goat cheese. The fried green tomatoes are topped with a crab salad made with a Creole remoulade. There’s a posole recipe, but this version is made with shrimp and green chiles, and wild Texas ducks are used for duck rillettes. Of course, there’s a meat chapter including adobo-grilled t-bone with red chile and cheese enchiladas, bock-braised beef short ribs, and crispy wild boar ribs with fresh plum barbecue sauce. But, it’s not a red meat-heavy kind of book. There’s also a Poultry chapter, a Seafood chapter, Tex-Mex, Vegetables and Sides, Breads, and Desserts. I appreciated how every once in a while a recipe caught me by surprise, and that was the case with the gingered acorn squash soup.

With ginger in the title of the recipe, I knew there would be a nice spice flavor in the soup. Then, I read about the pineapple in it which adds just a hint of fruitiness. The roasted acorn squash, sauteed onions, and homemade stock give the soup a rich savoriness, and then the ginger and pineapple add little punches of different flavors. Sometimes, when making a soup, the garnishes can seem like a step or two too many but not here. The sour cream with honey, buttery brioche croutons, and a sprinkling of an anise-flavored herb like tarragon or Mexican mint marigold were so well-suited to this soup I urge you not to skip them. This was a hearty, fall soup, and in small portions would be a lovely way to start a Thanksgiving feast. In fact, the entire Thanksgiving meal could come from this book by using the Mexican chocolate chile rub on turkey instead of chicken, whipping up a big bowl of the loaded garlic mashed potatoes, baking the ricotta spinach gratin, and for dessert, I’d pick the gingered pear fried pies.


Gingered Acorn Squash Soup

Makes 8 servings

2 acorn squash 
(approximately 6 cups cooked squash),
quartered and seeded
3 tablespoons unsalted butter, melted
2 tablespoons brown sugar
1/4 teaspoon ground allspice
2 tablespoons olive oil
1 small white onion, diced small
3 tablespoons finely diced fresh ginger
1/2 cup small-diced fresh or canned pineapple
1 teaspoon salt
1/4 teaspoon white pepper
4 cups chicken stock
1 cup heavy cream
1/2 cup sour cream
2 tablespoons honey
Fresh chopped tarragon, for garnish

Preheat your oven to 400°F.

Arrange the cut squash on a baking sheet and brush the cut sides with the melted
butter. Season each piece by sprinkling on the brown sugar and allspice. Bake the
squash until the flesh is tender, about 30 minutes. When the squash has cooled enough to handle, scoop out the flesh and set aside.

Heat a heavy soup pot over medium-high heat and add the olive oil. Add the onion
and ginger to the pot and cook until the onion becomes soft, about 4 minutes. Add the pineapple, salt, and white pepper and cook for another 2 minutes. Stir in the chicken stock, heavy cream, and squash and bring to a simmer. Slowly cook the soup, stirring occasionally, for 20 minutes. Remove the soup from the heat and, using an immersion blender, puree the soup until smooth. You can also blend the soup in batches in a blender or food processor.

To make the garnish, stir together the sour cream and honey in a small bowl. To
serve, ladle the hot soup into warmed bowls and drizzle the top of each with the sour cream mixture. Garnish with freshly chopped tarragon.

(Note: When I made this soup, I made one small change to the ingredients by using only one half cup of cream instead of a full cup.)
