Strawberry Ice Cream Shortcakes with Cornmeal Drop Biscuits

During strawberry season, I always think of shortcakes. And while I had some of the very freshest, best milk and cream on hand, strawberry shortcakes with vanilla ice cream quickly became a fantastic idea. I volunteer with Slow Food Austin, and we recently hosted a tour at Richardson Farms where they’re operating a newly-opened dairy. This is a small, family-run farm that sits about an hour’s drive outside of Austin. To give you a sense of the scale of this dairy, the milking operation is set up for four cows at a time. 

We visited the pretty bovine gals as they waited their turn outside, and then we watched as they came in and the milking began. Richardson’s guarantees that all their cows are of the A2 genetic variety, and as they breed the next generation, they are also guaranteed to be A2. That designation refers to a type of beta-casein protein, and cows in the US can be A1 or A2. Larger farms could have some cows of both types and don’t typically check which is which. The A2 beta-casein is thought to be more easily-digestible and to lead to fewer adverse health issues than A1. It was fascinating to learn that the farm has taken the steps to ensure that all their milk is A2. During the tour, we also visited the hungry, little calves and fed them from bottles before touring the milk tank room and seeing the pasteurizing machine. Here in Texas, raw milk can only be purchased at a farm. It can’t be sold at farmers’ markets or in stores. So, while Richardson’s offers raw milk to customers who visit the farm, everything they sell elsewhere is low-heat pasteurized. While there, I was able to purchase raw milk that had just entered the tank from the cows I saw being milked, and I also brought home some raw cream. I couldn’t wait to put it to good use. 

I should mention, the farm also produces meat including beef, pork, and chicken. They sell eggs, and they mill their own whole wheat flour and cornmeal from non-GMO plants. When I read A New Way to Bake, the Cornmeal Drop Biscuits caught my eye, and I knew they’d be great platforms for strawberry shortcake. I made them with whole wheat pastry flour, Richardson’s cornmeal and raw milk, and some grass-fed butter. The batter was scooped onto baking sheets, and they baked until golden. For the ice cream, as usual I followed the recipe for Vanilla Gelato from Elizabeth Falkner's Demolition Desserts . I used more of that fabulous milk that was heated gently and added to egg yolks. The custard was then poured through a sieve into a measuring pitcher, and the beautiful raw cream was added with some salt. I chilled the base overnight before churning the ice cream. For the strawberries, I just stemmed and halved them, tossed them with a little sugar, and waited for the juices to run. 

After visiting the farm, seeing what they’re doing, and hearing the trouble they’ve gone to to make the best product they can, I wanted to tell everyone I know to go buy their milk. I hope they’re able to sell raw milk as an option at our farmers’ markets soon. And, I hope more people take an interest in this incredible milk made right here in central Texas. I can report the milk and cream were sublime in all the ways I used them: in a spring chowder, splashed into some cold-brew coffee, and in these biscuits and ice cream for strawberry shortcakes.

Bourbon Bread

One of things I’m enjoying most about my new kitchen is the counter space on the island where I can work with dough. First, there’s plenty of room to knead and divide and roll dough. And, second, the smooth Silestone surface makes working with dough easier than ever. I use less flour than I did in the past because it’s so smooth. So, I was delighted to peruse all the bread recipes in the book Bien Cuit, by Zachary Golper and Peter Kaminsky, of which I received a review copy. After reading it, I wondered if I could take a hiatus from work and all other time commitments and just bake bread until I had tried everything in the book. Bien cuit, or “well done,” refers to a dark, lovely crust that’s not burnt but completely browned. It brings flavor and texture to a loaf. I became a quick fan of the book because all of the breads are made with a starter or pre-ferment. Not all of the starters are sourdough, some are made with commercial yeast, but they all involve stages of long, slow fermentation for flavor development. That’s how I love making bread. There are classic loaves and styles and also some reinterpretations and new inventions. The Portuguese Corn Bread, or broa de milho, is made with a cornmeal and rye starter and is baked into a pretty, round loaf. The Ciabatta, one of my favorite breads, is made a little differently than other recipes I’ve tried. It’s made with a yeast starter, and the completed dough is left to rest in the refrigerator overnight. I have to try it soon. There are variations on sourdough loaves and a Sourdough Rye Bread I’d like to try. Then, there’s a chapter just for rolls. Toasted Oatmeal Rolls, Late-Harvest Carrot Rolls with roasted carrots and carrot juice, Port and Fig Rolls, Kaiser Rolls, Sun-Dried Tomato Mini Baguettes, and all the others are calling my name. The Quick Breads chapter includes biscuits and scones, and the method for scone making involving layering the dough and baking the scones cut side up was very intriguing. And last, there’s a chapter with instructions and photos showing each and every step needed to create these recipes. I so wish I could just bake from page to page until I’ve tried everything. But, alas, I’ll have to work my way through the book when time allows. I started with the Bourbon Bread because I’d never seen anything like it. It’s a yeast-raised, cornmeal and flour bread made with bourbon in place of some of the water in the dough. 

As with all the breads here, you’ll need to plan ahead. This bread was started two days before it was baked. The starter was made with cornmeal, white flour, instant yeast, and water. It was mixed and left at room temperature for about 12 hours. The dough was made by combining the starter with water to loosen it from its bowl and then mixing it with more water and bourbon. A mixture of flour, cornmeal, sugar, salt, and yeast was added to the starter and water. The dough was mixed with a spoon and then folded repeatedly with a bowl scraper to incorporate all the ingredients. Then, the dough was rolled and tucked by hand and left to rest. During the next two hours, the dough was stretched and folded four times. During the third stretching, butter was spread over the surface of the dough before it was rolled up and left to rest before the fourth fold. To form loaves, the dough was divided into two parts, each part was shaped into a tube with slightly pointed ends, and the loaves were deeply cut with crossing lines to form diamond shapes. The shaped loaves were transferred to a flour-dusted, towel-lined baking sheet with the cut sides down, and they were refrigerated for 16 to 22 hours. The next day, they were baked on a baking stone with steam. I’ve mentioned before that every bread book I read includes a different technique for creating steam in a home oven. The technique suggested here is the cast iron pan with ice in the bottom of the oven approach which is easier than opening the oven repeatedly to spritz with a spray bottle. The loaves baked for about 28 minutes. 

The bourbon and cornmeal make this a fragrant, sweet-smelling bread. The crumb is tender inside the crunchy crown of a crust. In the head note, Kentucky ham is suggested as a perfect pairing with this bread, and that makes sense. I went with smoked chicken and blue cheese and can report they make an excellent accompaniment as well. I don’t think I’ll be making room on a shelf for this book just yet. I have lots more baking to do first. 

Bourbon Bread

makes 2 medium loaves 

I am very excited about this bread, in part because I think bourbon is one of the most elegant beverages. It is simultaneously sweet and bitter, smoky and smooth, and graced with the subtle vanilla notes of oak. Because bourbon is a corn-based whiskey, I include corn in the bread—both in the starter and the dough. I had thought it was a nice accompaniment to a vegetable course or salad. Then Peter served it with a slice of Kentucky ham (which, like bourbon, is one of the glories of the Bluegrass State). It was off the charts! The only thing missing was a mint julep. My one caution in regard to baking with bourbon (or any whiskey) is that it has a bitter component that can overpower, so don’t be tempted to put in a touch extra for good measure. The choice of bourbon is up to you. Common wisdom is that when cooking with wine, it’s best to use a wine you would like to drink. The same holds true for baking with whiskey. My choice here is Ezra Brooks because it’s pretty mellow, not overpowering, and not super expensive. 

STARTER 
200 grams (1 c + 3 tbsp) medium-grind cornmeal 
100 grams (1/2 c + 3 1/2 tbsp) white flour 
0.2 gram (pinch) instant yeast 
260 grams (1 c + 1 1/2 tbsp) water at about 60°F (15°C) 

DOUGH 
380 grams (2 1/2 c + 3 tbsp) white flour, plus additional as needed for working with the dough 
120 grams (3/4 c) medium-grind cornmeal 
30 grams (2 1/2 tbsp) granulated sugar 
15 grams (2 1/2 tsp) fine sea salt 
1 gram (generous 1/4 tsp) instant yeast 
150 grams (1/2 c + 2 tbsp) water at about 60°F (15°C) 
60 grams (1/4 c) bourbon 
 25 grams (1 3/4 tbsp) unsalted butter, at room temperature 

FOR THE STARTER 
1 Stir together the cornmeal and white flour in a medium storage container. Sprinkle the yeast into the water, stir to mix, and pour over the cornmeal mixture. Mix with your fingers, pressing the mixture into the sides, bottom, and corners until all of the flour is wet and fully incorporated. Cover the container and let sit at room temperature for 10 to 14 hours. The starter will be at its peak at around 12 hours. 

FOR THE DOUGH 
1 Stir together the white flour, cornmeal, sugar, salt, and yeast in a medium bowl. 

2 Pour about one-third of the water around the edges of the starter to release it from the sides of the container. Transfer the starter and water to an extra-large bowl along with the remaining water and the bourbon. Using a wooden spoon, break the starter up to distribute it in the liquid. 

3 Add the flour mixture, reserving about one-sixth of it along the edge of the bowl. Continue to mix with the spoon until most of the dry ingredients have been combined with the starter mixture. Switch to a plastic bowl scraper and continue to mix until incorporated. At this point the dough will be just slightly sticky to the touch. 

4 Push the dough to one side of the bowl. Roll and tuck the dough, adding the reserved flour mixture and a small amount of additional flour to the bowl and your hands as needed. Continue rolling and tucking until the dough feels stronger and begins to resist any further rolling, about 8 times. Then, with cupped hands, tuck the sides under toward the center. Place the dough, seam-side down, in a clean bowl, cover the top of the bowl with a clean kitchen towel, and let rest at room temperature for 30 minutes. 

5 For the first stretch and fold, lightly dust the work surface and your hands with flour. Using the plastic bowl scraper, release the dough from the bowl and set it, seam-side down, on the work surface. Gently stretch it into a roughly rectangular shape. Fold the dough in thirds from top to bottom and then from left to right. With cupped hands, tuck the sides under toward the center. Place the dough in the bowl, seam-side down, cover the bowl with the towel, and let rest for 30 minutes. 

6 For the second stretch and fold, repeat the steps for the first stretch and fold, then return the dough to the bowl, cover with the towel, and let rest for 30 minutes. 

7 For the third stretch and fold, gently stretch the dough into a rectangle. Pinch the butter into pieces, distributing them over the top of the dough. Using your fingers or a spatula, spread the butter across the surface of the dough. Roll up the dough tightly from the end closest to you; at the end of the roll the dough will be seam-side down. Turn it over, seam-side up, and gently press on the seam to flatten the dough slightly. Fold in thirds from left to right and then do 4 or 5 roll and tuck sequences to incorporate the butter. Turn the dough seam-side down and tuck the sides under toward the center. Return the dough to the bowl, cover with the towel, and let rest for 30 minutes. 

8 For the fourth and final stretch and fold, repeat the steps for the first stretch and fold, then return the dough to the bowl, cover with the towel, and let rest for 20 minutes. 

9 Line a half sheet pan with a linen liner and dust fairly generously with the dusting mixture. 

10 Lightly dust the work surface and your hands with flour. Using a bench scraper, divide the dough into 2 equal pieces. Press each into a 7-inch (18 cm) square, then roll into a loose tube about 7 inches (18 cm) long. Let rest for 5 minutes. Press each piece out and then shape into a very tight tube 9 to 10 inches (23 to 25 cm) long. Using a bench scraper, make 3 to 5 cuts on the diagonal down the loaf. Then, make 3 to 5 cuts in the opposite direction, crossing the first set of cuts, to make diamonds. 

11 Transfer to the lined pan, cut-side down, positioning the loaves lengthwise. Dust the top and sides of the dough with flour. Fold the linen to create support walls on both sides of each loaf, then fold any extra length of the linen liner over the top or cover with a kitchen towel. Transfer the pan to the refrigerator and chill for 16 to 22 hours. 

12 Set up the oven with a baking stone and a cast-iron skillet for steam, then preheat the oven to 480°F (250°C). 

13 Using the linen liner, lift and gently flip the loaves off the pan and onto a transfer peel cut-side up. Slide the loaves, still cut-side up, onto a dusted baking peel. Working quickly but carefully, transfer the loaves to the stone using heavy-duty oven mitts or potholders. Pull out the hot skillet, add about 3 cups of ice cubes, then slide it back in and close the oven door. Immediately lower the oven temperature to 440°F (225°C). Bake, switching the positions of the loaves about two-thirds of the way through baking, until the surface is a deep, rich brown, with some spots a long the scores being very dark (bien cuit), about 28 minutes. 

14 Using the baking peel, transfer the loaves to a cooling rack. When the bottoms of the loaves are tapped, they should sound hollow. If not, return to the stone and bake for 5 minutes longer. 

15 Let the bread cool completely before slicing and eating, at least 4 hours but preferably 8 to 24 hours.

Cherry Tomato and Goat Cheese Cobbler

I keep coming back to the book Huckleberry. I had a feeling this would happen when I first read it. I haven’t baked my way entirely through the Muffins chapter yet, but I did find out just how delicious the Chocolate Chunk Muffins are. And, I don’t know how I haven’t baked the Blueberry Brioche or made the Brown Rice Quinoa Pancakes yet but I will eventually. Lately, I’ve been flipping back through the pages of all the savory dishes for breakfast or brunch. The photos of the sandwiches cause serious cravings. The Fried Green Tomato and Spicy Slaw Tartine and the Smashed Avocado Toast with Hard-Boiled Eggs and Anchovy Dressing will need to happen soon. But then, I remembered this lovely tomato cobbler that Barbara showed on her blog back in April. Roasted cherry tomatoes were topped with biscuits made with a mix of whole wheat flour, all-purpose flour, and cornmeal. I had pretty, little Juliet red tomatoes, Sungold yellow cherry tomatoes, and local heirloom cornmeal, and the time was right for this cobbler. It’s pretty quick and easy to prepare, and it’s even easier if you make the biscuits in advance and leave them in the freezer. 

To start the biscuits, whole wheat flour, all-purpose flour, cornmeal, baking powder, and salt were combined. Butter was worked into the flours by hand, and this is the way I almost always make pastry, scones, or biscuits. You can really feel how well the butter is getting worked in, and you stop when the butter pieces are broken up just enough. Buttermilk was added to bring the dough together, and it was transferred to a board to knead a couple of times. The biscuits were cut, and they were placed on a baking sheet in the freezer. I made them a couple of days in advance. For the cobbler, cherry tomatoes were cooked on top of the stove, and I added some garlic and crushed red chiles. Once they were softened, I transferred them to a baking dish. The tomatoes were topped with the biscuits, and the biscuits were brushed with an egg wash. The cobbler baked for about 25 minutes, and then goat cheese was sprinkled around between the biscuits. The oven temperature was increased, and the cobbler went back in for another 10 minutes. I topped the cobbler with chopped basil before serving. 

Juicy, roasted, summer tomatoes with fresh, mild goat cheese and buttery biscuits make a lovely, leisurely meal for a weekend morning. The biscuits rise and turn golden on top while soaking up tomato juices from below for a great crisp and tender texture contrast. Looking at how many other dishes I want to try in this book, some breakfast-for-dinner nights will come in handy.

Cornmeal with Rosemary and Parmigiano Biscotti

There’s a lot to love about biscotti. You can go a very traditional route with them or veer off into all sorts of creative directions. For Christmas this past year, I got creative by baking big, mocha latte biscotti with chocolate chips in them that got drizzled with a white chocolate-espresso glaze. I’ve also made a peanut butter version and some that were fully dipped in chocolate. But, I’m also a big fan of the more proper, Italian almond cantucci that are subtly sweet, nutty, and all about the crunch. When visiting our friends who had just returned from a trip to Florence, they served us almond cantucci with Vin Santo for an after dinner treat. That combination proves that sometimes simple is most definitely better. And, the wonderful thing about Ciao Biscotti, the new book from Domenica Marchetti, is that it covers the full spectrum of biscotti making. I received a review copy of the book. The recipes begin with more traditional, nutty versions and one that even has Vin Santo in the dough. And, then there is a series of chocolate options including one that it is half lemon and half chocolate. There are dried fruit-filled flavors and suggestions for glazing and topping the cookies. Among the Fantasy Flavors, there’s even a Green Tea with White Chocolate Glaze. Next, you’ll find the chapter for The Savory Side. I’ve baked a lot of different kinds of biscotti, but I had never tried a savory one. I couldn’t wait. Mountain Gorgonzola with Walnuts, Pepper Jack and Green Peppercorn, and Sun-Dried Tomato and Fennel all sounded delicious, but I stopped everything to bake the Cornmeal with Rosemary and Parmigiano. The first few times I ever made biscotti, I had anxiety about cutting the slender cookies and how long to bake them for the second bake. I now realize that the issue was that I was following recipes that weren’t well-conceived. The instructions in this book are clear; there are clues for what to look for at each stage; and the baking times are specific for the type of biscotti being made. 

For these crunchy, savory cookies, you begin by combining flour, cornmeal, baking powder, and salt in the bowl of a mixer. I used a local, heirloom variety of cornmeal from Richardson Farms. The dry ingredients were mixed briefly to combine. Next, grated Parmigiano-Reggiano, sliced toasted almonds, and chopped rosemary were added and mixed. Small chunks of butter, beaten eggs, and milk were added last, and the dough was turned out onto a board. It was divided into two pieces that were each formed into a long loaf shape. The goal is to end up with small biscotti, so the dough loaves were stretched long and kept narrow. The dough was brushed with egg before it was baked at 350 degrees F for about 25 minutes. After the first bake, the loaves were left to cool for about 20 minutes before being cut into pieces. For this recipe, the cookies were cut to a thickness of about one-third inch. For the second bake, you can place the cookies cut-side-down and bake for 20 minutes, turn them over, and bake for another 20 minutes. Or, another tip I learned from Alice Medrich is to stand the biscotti on edge so both cut sides are exposed to the heat of the oven, and bake for the full 35 – 40 minutes rotating the baking sheet at the halfway point. If you want to check the crunchiness of the biscotti to decide if they should bake longer, you’ll need to remove one and let it cool before tasting. They get crunchier as they cool. 

The parmesan and rosemary smelled fantastic as the biscotti baked. I imagined several ways to use them like for dipping into a bowl of minestrone or topping a salad with them. But, the suggestion in the book for serving them with Chianti Classico was a perfect pre-dinner nibble with wine. I’m delighted to see the world of biscotti get a little bigger with the addition of a savory side. 

Cornmeal with Rosemary and Parmigiano

1 Tbsp vegetable oil 
1 1⁄2 cups/185 g unbleached all-purpose flour 
1⁄2 cup/70 g fine cornmeal 
1 tsp baking powder 
1⁄4 tsp fine sea salt 
1 cup/80 g grated Parmigiano-Reggiano cheese 
1 cup/100 g sliced almonds, toasted 
1 Tbsp finely minced fresh rosemary
6 Tbsp/85 g unsalted butter, cut into 1⁄2-in/12-mm pieces, at cool room temperature 
2 large eggs, lightly beaten 
2 to 4 Tbsp half-and-half or milk 

Makes about 50 biscotti 

Fine-ground cornmeal adds a delicate crunch and pretty golden hue to these rosemary-infused biscotti. Slice these thinly and serve them with a nice runny cheese.  

Heat the oven to 350°F/180°C. Lightly coat an 11-by-17-in/28-by-43-cm rimmed baking sheet with the oil. Combine the flour, cornmeal, baking powder, and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix briefly on low speed. Add the cheese, almonds, and rosemary and mix to combine. Add the butter in pieces and mix on medium-low speed until the mixture looks like damp sand. Set aside 1 Tbsp of the beaten eggs. Combine the remaining eggs with 2 Tbsp half-and-half and pour into the mixing bowl. Mix on medium speed until a soft, slightly sticky dough has formed. Add the remaining half-and-half if necessary to make the dough come together. 

Turn the dough out onto a lightly floured work surface and pat it into a disk. Divide it in half. Lightly moisten your hands with water and gently roll one portion of dough into a rough oval. Place it lengthwise on one half of the baking sheet and use your hands and fingers to stretch and pat the dough into a log about 2 1/2 in/6 cm wide and 12 in/30 cm long. Shape the second piece of dough in the same way, moistening your hands as necessary. Press down on the logs to flatten them out a bit and make the tops even. Brush the reserved egg over the tops of the logs. 

Bake the logs for 25 to 30 minutes, or until they are lightly browned and just set—they should be springy to the touch and there should be cracks on the surface.
Transfer the baking sheet to a cooling rack. Gently slide an offset spatula under each log to loosen it from the baking sheet. Let the logs cool for 5 minutes, and then transfer them to the rack and let cool for 20 minutes. Lower the oven temperature to 300°F/150°C. 

Transfer the cooled logs to a cutting board and, using a Santoku knife or a serrated bread knife, cut them on the diagonal into 1/3-in-/8-mm-thick slices. Arrange the slices, cut-side up, on the baking sheet (in batches if necessary) and bake for 20 minutes. Turn the slices over and bake for another 15 to 20 minutes, until they are crisp and golden. Transfer the slices to the rack to cool completely. The biscotti will keep for up to 10 days in an airtight container stored at room temperature. 

What to drink: Chianti Classico.

Sour Cream Corn Bread

There are times when you need to know a dish is going to be terrific. When friends or family are visiting and I really want to put a delicious meal on the table with no uncertainty, I head for the Barefoot Contessa books. I’ve lost count of Ina’s recipes that have become my go-to’s because everyone always loves them. And, I’ve lost count of how many times I’ve made each of them. The Turkey Lasagna from Barefoot Contessa Family Style, the Cranberry Orange Scones from Barefoot Contessa at Home, the Crispy Mustard-Roasted Chicken from Barefoot Contessa Foolproof, and Roasted Tomato Basil Soup from The Barefoot Contessa Cookbook never fail to please. Needless to say, I’m a fan. I couldn’t wait for the latest book in the series, Make it Ahead, and I received a review copy. In this book, the recipes are true to Ina’s style as always, but for each, there are instructions for how to make and store things in advance. In some cases, part of a recipe can be started in advance, and in others the entire dish can be made ahead. I’ll be making the Make-Ahead Goat Cheese Mashed Potatoes for Thanksgiving, and I really want to try the Tomato Mozzarella Pan Bagnat that can be assembled in advance and grilled when ready to serve. The Wild Mushroom and Farro Soup would be great to have in the refrigerator during a chilly week, and I don’t think I can wait one more day before trying the Chocolate Cake with Mocha Frosting. Last weekend, I made ahead our entire Sunday brunch. It was a delight to have everything ready and to serve the meal so easily. I made the Mini Italian Frittatas which are rich with Fontina, half-and-half, and parmesan. They were baked in a muffin tin to create individual servings, and they reheated perfectly. I served the little frittatas with toasted Sour Cream Corn Bread which has become my new favorite thing to pop out of the toaster. 

I don’t think I’d ever made corn bread in a loaf pan, and I don’t recall ever toasting it. The loaves can be baked, cooled, and stored wrapped in plastic wrap in the refrigerator for up to four days. Or, they can be frozen for three months. When ready to serve, just cut thick slices and toast them. The recipe makes two loaves, so I have one stashed in the freezer for a later date. To start, the dry ingredients were whisked together including flour, cornmeal, sugar, and I used half the sugar to make it less sweet, baking powder, and salt. In a separate bowl, eggs, milk, and sour cream were whisked and melted butter was slowly added last. The wet ingredients were folded into the dry ingredients, and that was it. The loaves baked for about 40 minutes while puffing up and turning a pale golden color. I let the loaves cool, stored them away, and sliced pieces to toast just before brunch. 

The edges get toasty and crispy while the center of each thick piece remains tender. Salted, Irish butter was exactly right to spread on top. It’s nice to know I have another loaf ready and waiting whenever I need it. And, I like knowing I have this book for reliable, crowd-pleasing dishes that are perfect for entertaining. 

Sour Cream Corn Bread

Makes 2 loaves 

This all-American quick bread is usually served with dinner. To make it ahead, I bake it in loaves, and then slice, toast, and slather it with butter and jam for breakfast. Bob’s Red Mill cornmeal is widely available and essential for this recipe. 

1/2 pound (2 sticks) unsalted butter, melted, plus extra to grease the pans 
3 cups all-purpose flour 
1 cup Bob’s Red Mill medium-grind yellow cornmeal 
1/2 cup sugar 
2 tablespoons baking powder
1 tablespoon kosher salt 
1 1/4 cups whole milk 
3/4 cup sour cream 
2 extra-large eggs, at room temperature 
Salted butter and strawberry jam, for serving 

Preheat the oven to 350 degrees. Grease and line the bottom of two 8½ × 4½ × 2-inch loaf pans with parchment paper. 

Whisk together the flour, cornmeal, sugar, baking powder, and salt in a large bowl. In a separate bowl, whisk together the milk, sour cream, and eggs and then slowly whisk in the melted butter. Pour the wet ingredients into the dry ones and mix them together with a rubber spatula, until combined. Don’t overmix! Pour the batter into the prepared pans, smooth the top, and bake for 35 to 40 minutes, until a toothpick comes out clean. Place the pans on a rack and cool completely. 

When ready to serve, slice the corn bread, toast it, and serve with salted butter and strawberry jam.  

Make It Ahead: Bake the corn breads, cool completely, wrap tightly, and refrigerate for up to 4 days or freeze for up to 3 months. Defrost, if necessary, slice 1/2 inch thick, and toast.

Okra Cornmeal Cakes with Pimento Cheese

Okra season is in full swing, and I’ve been trying some different ways of cooking it thanks to the new book Okra: A Savor the South Cookbook by Virginia Willis. Back in April, I attended a class taught by Virginia Willis at Central Market Cooking School  with a media pass and posted photos on my Facebook page. I’ve been holding onto the book, waiting for the weeks when bags of okra appear in our CSA boxes. The book, of course, shows off several Southern okra dishes, and then there are okra recipes from around the world. I’ve made a Greek-style dish of okra and tomatoes before that’s very similar to the Greek Okra Ragout in the book. Other global dishes include Nigerian Black-Eyed Pea and Okra Fritters, Egyptian Okra and Chickpeas, Indian Spicy Sweet Okra with Peanuts, and Jamaican Curried Shrimp and Okra. The Southern okra recipes include several classics and some new ideas as well. There are different versions of fried okra, gumbos, and stewed okra. A couple of weeks ago, I tried the Oven-Fried Okra which involves dipping sliced okra into a buttermilk and egg batter, dusting the pieces with cornmeal, and baking them on a baking sheet coated with oil. The crispy okra was every bit as good as deep-fried okra and made a great snack with cold beer. The next recipe on my to-try list was the Okra Cornmeal Cakes. Sliced okra was mixed into a cornmeal batter and fried into golden, tender rounds. The recipe suggests stacking the cakes with a pimento cheese filling with sliced tomato and lettuce to make little sandwiches. I served them open-faced with a mound of toppings instead. And, there are options for the fillings or toppings like goat cheese, ricotta, or herbed cream cheese and avocado, microgreens, or sprouts. But, nothing says Southern food like pimento cheese and summer tomatoes. 

To make the cakes, two cups of cornmeal, two teaspoons baking soda, and a teaspoon of salt were combined in a mixing bowl. In a separate bowl, an egg was whisked with one and a half cups of water, and that mixture was added to the dry ingredients and whisked until smooth. A jalapeno was seeded and finely chopped, a clove of garlic was minced to a paste, and eight ounces of okra was cut into small slices, and all of that was added to the batter. Oil was heated in a cast iron skillet, and then one-quarter cup of batter was poured into the hot oil to form each cake. They cooked for a few minutes on each side, were drained on a towel-lined baking sheet, and were sprinkled with salt and pepper. I topped the caked with a spoonful of pimento cheese, chopped tomatoes, and thinly sliced basil.

I’ve realized I have a thing for little, vegetable cakes stacked with delicious toppings. I seem to gravitate to this type of dish. But, this was a great version of the concept for summer. I’m already sold on okra and require no conversion. For anyone who still needs some convincing about this healthy vegetable, this new book could hold the inspiration that changes your mind.

Cayenne Cantaloupe Sorbet with Honey-Cornmeal Cones

I somehow got it into my head that I should try making ice cream cones. It wasn’t just the idea of making a frozen dessert and scooping it onto a cone that was fascinating me. It was actually making the cones themselves that I had to do. I wasn’t so concerned with the waffle texture and using a proper pizelle maker, but I did want to form cone shapes not just drape tuille circles over little bowls for crunchy cups. I ordered a cone roller, and was ready to experiment. There are recipes for ice cream cones in The Perfect Scoop, and I opted for the Honey-Cornmeal variation with added chopped rosemary. I’d already decided on the Cayenne Cantaloupe Sorbet from the Humphry Slocombe Ice Cream Book, and honey and cornmeal in a cone seemed like a good match for it. Now, I enjoy a good kitchen challenge as much as the next obsessed home cook, but I will say that making the cones was one of the trickier things I’ve attempted lately. David Lebovitz offers some great tips for baking the batter in the oven and rolling the cones, but there are a lot of variables at play here. I drew six-inch circles on the back of parchment paper which lined the baking sheets. Then, I was able to spread the batter thinly, as instructed, to fill the circles. A baking time of ten to fifteen minutes was suggested, but that produced edges that were far too crispy to roll. You need to catch the baked batter at just the right moment when it’s set and cooked through but still pliable enough to roll into a cone. Oh, and you have to do this while it’s hot, which burns your fingers a bit. After one or two ugly results from trial and error, I pulled on some plastic gloves and got determined about this. Finally, a few cones seemed worth keeping, and the dessert plan was able to happen. 

There are a couple of other sorbets in the Humphry Slocombe book I also want to try which involve Hibiscus Beet and Thai Chile Lime, but I had a cantaloupe on hand so this one came about first. It’s a simple puree of a whole chopped cantaloupe, sugar, a pinch of salt, a couple of tablespoons of rice vinegar, a couple of tablespoons of vodka, some lime juice, and some cayenne. I usually always say that I add more of any hot chile ingredient in a recipe, but here, the one-half teaspoon called for was actually more than enough. I’d use a little less next time. All of the ingredients were pureed in a blender and then poured through a sieve before being chilled and then churned in an ice cream maker. While it spent some time in the freezer to firm, I set about the project that was making ice cream cones. The batter was made with an egg, an egg white, honey, melted butter, sugar, flour, cornmeal, and a little chopped rosemary. Two tablespoons of batter was used for each cone, and it was spread into a six-inch circle on a parchment-lined baking sheet. The batter baked for about six to eight minutes until set and golden at the edges. Once removed from the oven, the baked circles were flipped over with a metal spatula and immediately rolled into a cone on a wood form. The edges should be golden but not so crispy that they break when rolled on the form. Plan to test the first two to gauge the needed baking time. Also, wearing plastic gloves helps with touching the hot cones while rolling. When slightly cooled and firm, the cone was removed from the form, and then next cone was shaped. Since there is a small hole in the bottom of each cone, I melted chocolate for dipping. When the chocolate set on the tips of the cones, the holes were sealed. 

I don’t think I’d want to make homemade cones for a large party, but they were a fun treat for just a few desserts. And, the chile-spiked, fruity sorbet was a great flavor for the cornmeal cones with a hint of rosemary. If you’re going to burn your fingers for a kitchen project, it should be one with a result at least as delightful and tasty as this one.

Zucchini Galettes with Chipotle Creme Fraiche + Book Giveaway

I’m thrilled to share a new book with you today, and I am literally sharing since one lucky commenter will receive a copy of it. The book is Cowgirl Chef: Texas Cooking with a French Accent by Ellise Pierce who also writes the blog Cowgirl Chef. I received a review copy, and the publisher has provided an extra book to give away. Ellise and I have chatted via Twitter, visited each other’s blogs, and emailed up and back for a couple of years now. All the while, I’ve been green with envy over the fact that she lives in Paris with all those boulangeries and patisseries right outside her door. And, since she’s from Texas, she’s been maybe a little jealous of my easy access to Tex-Mex restaurants and our amazing, summer peaches here in Austin. But, as she explains in this book, one way to close that gap between far-away places is through cooking. When she arrived in Paris and things felt unfamiliar, what made everything better was cooking the dishes she missed from home. Then, little by little, she started finding new favorite foods and warming up to her new home. In the chapter intros and recipe headnotes, which are so well-written, you get glimpses of Ellise’s Parisian life, navigating different markets, learning to substitute ingredients, and working on her French accent both in the city and on trips to other parts of the country.

The recipes are either Texas-style food with French flair or homemade versions of French restaurant dishes. There are Chicken Empanadas with Cilantro Yogurt made with classic roast chicken, Cowgirl Quiche with a polenta crust, My Big Fat French Salad based on one from Le Relais du Gascon, Spinach Potato and Caramelized Onion Tacos served with homemade salsa if you can’t get Cholula, Basque-style Fish en Papillote, Brown Butter Walnut Cakes, and French Chocolate Sauce. I especially enjoyed the tips or Double-Duty suggestions for recipes. For instance, the Gascon-Style Pork Chops with Pepper Honey includes suggestions for other uses for that black pepper honey like spooning it over slices of Manchego. Another tip that caught my eye was in the recipe for Cauliflower Galettes with Chipotle Creme Fraiche in which she suggests the option of using zucchini instead of cauliflower. I had just received some zucchini from my CSA, and I couldn’t wait to try those little, savory cakes made with cornmeal and topped with spicy creme fraiche. If you do use cauliflower, there are instructions for roasting it first, but with zucchini, you just grate it, leave it raw, and add it to the batter. The batter is made by whisking cornmeal, baking powder, sea salt, cayenne, and cumin in a bowl. In a separate bowl, eggs, plain yogurt, and water were combined, and the wet mixture was poured over the dry ingredients and mixed. The grated zucchini, some grated cheddar, and sliced green onions were folded into the batter. Little pancakes were fried in vegetable oil over medium-low heat so the middles could cook through before the surfaces browned too much. Chopped, canned chipotles were stirred into creme fraiche for the topping.

The crispy-edged galettes had great texture from the cornmeal, the cumin and cayenne gave them spunk, and the cool, spicy, tangy creme fraiche was deliciously French-Tex-Mex. When I’m longing for a life in Paris, I can make some Caramel Fleur de Sel Pots de Creme, and when Ellise is homesick, she can whip up a batch of homemade Corn Tortillas. It’s not exactly the same as being there, but it’s faster than a transatlantic flight.

Cauliflower Galettes with Chipotle Creme Fraiche

Makes about a dozen (2 1/2-inch/6 cm) galettes

1 medium head of cauliflower, cut into florets
olive oil
sea salt and pepper
1 cup/145 grams of cornmeal
2 teaspoons of baking powder
1 teaspoon of sea salt
1/2 teaspoon of cayenne pepper
1/2 teaspoon of cumin
2 eggs
1 (5.29 ounce/150 gram) container of Greek yogurt
1 cup/240 ml of water
4 green onions, sliced
1 cup/60 grams of grated cheddar cheese
4 tablespoons of vegetable oil
Chipotle Creme Fraîche (recipe follows)

1. Preheat your broiler and line a cookie sheet with foil. Position a rack in the middle of the oven.
2. Toss the cauliflower florets on the foil-lined cookie sheet, add a little olive oil, and salt and pepper. Toss it all together with your hands, then slide the pan into the oven. The florets will begin to brown after about 10 minutes—when they do, pull them out of the oven and turn them over, so the other side browns, too. This’ll take about 10 more minutes. When browned on both sides, remove from the oven and let cool.
3. To make the galettes, in a medium bowl, whisk together the cornmeal, baking powder, sea salt, cayenne pepper, and cumin.
4. In a separate bowl, whisk together the eggs, yogurt, and water. Add this mixture to the dry ingredients and stir together. If the batter is too thick, just add a bit more water. Gently fold in the cauliflower florets, grated cheddar, and green onions, reserving about 2 tablespoons of green onions for garnish.
5. Heat 2 tablespoons of the vegetable oil in a skillet and turn the heat to medium-low. When it’s hot, spoon about 2 tablespoons of the batter for each galette into the skillet, fitting in as many as you can. You’ll need to work in batches. Cook the galettes for 3 to 4 minutes, or until the bottoms are brown, and flip to the other side for another few minutes. You don’t want these to cook too fast, or they’ll be wet in the middle. Repeat with the remaining vegetable oil and batter. Serve immediately with Chipotle Crème Fraîche, and sprinkle some chopped onions on top.

ADVANCE PLANNING: Roast your cauliflower ahead of time, so all you have to do is assemble and cook them up.
COWGIRL TIP: Reheat your leftover galettes the next day—just pop them in the toaster.
SWAP-IT: Try using grated zucchini instead of cauliflower.

Chipotle Creme Fraiche

Makes 2 cups/480 ml

16 ounces/480 ml of crème fraîche or sour cream
2 to 3 chipotle chiles in adobo sauce

Toss your chipotles in a food processor to finely chop them up, or do this by hand. Add your crème fraîche or sour cream, and stir it up. Voila!

Chile Cheese Cornbread

I must be feeling bold because I'm about to disagree with James Beard. I just read Beard on Bread and was a bit dismayed with what he had to say about sourdough bread. He wrote: "Despite my own feeling that sourdough bread is much overrated and is difficult to perfect at home I am including one recipe in this collection because interest in the subject is so tremendous... I'm not sure it is worth the trouble." Difficult? Not worth the trouble? I wish I could have had the opportunity to convince him otherwise. Yes, making bread from a sourdough starter requires time and patience, and yes, the results vary depending on the strength of the starter, the weather, and the flour used, but it also seems a little like magic to make bread with such simple ingredients and a home-grown, living, wild yeast starter. With bread-baking, time means flavor, and nothing compares to the taste of slowly fermented and proofed sourdough. I could go on all day about my love of sourdough bread baking, and it's interesting to note that the one sourdough recipe Beard included in this book was made with a starter created from commercial yeast rather than being grown from wild yeast. But, the book is full of several interesting breads of other types. The pizza caccia nanza with pieces of sliced garlic and rosemary inserted in the dough before baking sounds delicious. Jane Grigson's walnut bread from southern Burgundy with onions, walnuts, and walnut oil is one I plan to try too. There are also quick breads, rolls, pita, doughnuts, biscuits, and monkey bread to name a few. So, there are many great things about this book even if Beard was completely wrong about sourdough.

One of those great things was the recipe for a rich cornbread. This was one of Beard's oldest bread recipes and one of his favorites. Not only is this cornbread filled with fresh corn kernels and chopped green chiles, there's grated cheese and a full cup of sour cream. Canned, chopped green chiles are suggested, but since I like to roast chiles, I made my own. I roasted two poblanos on top of the stove and then peeled, seeded, and chopped them. Then, kernels were cut from three ears of fresh corn, and a quarter pound of gruyere was grated. Making the bread couldn't be simpler since you just stir together yellow cornmeal, salt, baking powder, that full cup of sour cream, three quarters of a cup of melted butter, two eggs, the grated cheese, and chopped chiles. The mixture was baked in a nine inch square pan, and it browned nicely on top.

This is no typical, dry, crumbly cornbread. It was more of a meal in the form of cornbread with a tender crumb and lots of flavor and texture, but it was decadently delicious. I had lots of local, summer vegetables on hand like okra, tomatoes, black-eyed peas, and more corn, so I made a fresh, simple vegetable stew to accompany it. Beard might have been wrong to dismiss homemade sourdough, but clearly, he knew of some pretty good other breads.

Cornmeal-Lime Cookies

I'm always drawn to a cornmeal-lime cookie, but I'm not always happy with what I get. Some versions tend to be dry and often the lime is barely discernible. Well, I can stop trying every version that comes along, because I've found one that delivers big in texture and taste. These cookies are from the new book Flour, and I told you I'd be mentioning it frequently around here. They bake up puffed and light with a tender, almost cake-like crumb, they have great cornmeal flavor, and the lime is both noticeable and delicious. The thick glaze that's brushed onto each cookie adds a sweet, tart layer on top with bits of lime zest adding decoration. I made some of these at the recommended size of about one quarter cup of dough per cookie, and I made a some at a smaller size. The smaller sized cookies worked fine and still had the same tender texture. What I really should have done was double the recipe, and next time I definitely will.

Making the cookies started with the standard creaming together of butter and sugar. Lime zest was added with eggs and vanilla followed by a whisked-together mix of flour, cornmeal, baking powder, and salt. As I mentioned, the cookies were formed from one quarter cup scoops of dough, and the scoops were slightly flattened with the palm of my hand. Do you use an ice cream scoop for placing cookie dough on baking sheets? I started doing that years ago, and I use scoops for muffins too. Some scoops break easily or the sliding arm that glides through the scoop seems to constantly pop out of its track. If you've ever had that problem, I may have the solution for you. Food scoops work better than ice cream scoops, and they come in all different sizes. I used the 2.07 ounce scoop here. The large cookies baked for about 25 minutes, and the slightly smaller ones I made baked for about 20 minutes. The glaze was made with confectioners' sugar, water, fresh lime juice, and lime zest. Once the cookies were cool, the glaze was brushed onto the tops, and they were left to dry.

I noticed a look of surprise that came upon each person who tasted these cookies, and they surprised me too. They're simple cornmeal-lime cookies, but they're different and better. That light texture and the great flavor make them the best of their kind that I've tried. I know I'll be baking these repeatedly, but first I have to find out what else there is to discover in this book.
