I have a little problem. I'm addicted to cookbooks, food writing, recipe collecting, and cooking. I have a lot of recipes waiting for me to try them, and ideas from articles, tv, and restaurants often lead to new dishes. I started losing track of what I've done. So now I'm taking photos and writing about what I've prepared—unless it's terrible in which case I forget it ever happened.
I’m always drawn to the flavors of Levantine cooking and the generous use of vegetables in varied dishes. A new book starts with those flavors and adds new ingredients to open up the possibilities of this style of cuisine. The book is Levant: New Middle Eastern Cooking from Tanoreen by Rawia Bishara, and I received a review copy. Her first book, Olives, Lemons, and Za’atar, stuck more closely to traditional recipes, but this time, she explores some new directions as she does at her New York restaurant Tanoreen. What I enjoyed about this book is that it gives you freedom to roam about a bit with traditional dishes. Rather than sticking to how a dish has always been made, new discoveries are celebrated and encouraged. The recipes are still inspired by Middle Eastern cooking but with a new perspective. For instance, the Shakshuka is a green version made with tomatillos, poblanos, and summer squash. Although hummus literally translates to chickpeas, here the concept is expanded into four variations, none of which include chickpeas. And, I can’t wait to try the Avocado Hummus. The Fall Fattoush is a twist on the familiar pita bread salad made with red cabbage, radicchio, and shredded beet. There’s a vegetarian Kibbie made with potatoes and spices that’s served on a lentil stew that looks perfect for a cold, fall day. There are meat dishes too like Harissa Baked Chicken, Tanoreen Spiced Cornish Hens, and Grilled Fish Kabobs. But, I got sidetracked among all the vegetable options and had to try the Portobello Shawarma and Quinoa Tabouleh first. This vegan shawarma starts with chopped Portobello mushrooms and lots of spices. The chopped mushrooms were combined with black pepper, ground coriander, cumin, turmeric, cardamom, nutmeg, chopped fresh garlic, olive oil, and white vinegar. The mixture was cooked in a heated skillet until the mushrooms were tender. I was surprised at the amount of vinegar but found that it gave the mixture just the right added flavor. The cooked mixture was intended to be served on fresh pita with sandwich toppings like cucumber, tomatoes, pickles, and tahini sauce. I went in more of an appetizer direction and served the mixture on homemade, baked pita chips, and topped it with chopped tomatoes, cucumbers, and herbs. The Quinoa Tabouleh is a lot like the traditional dish only with quinoa used in place of bulgur wheat. Diced fennel is suggested along with tomatoes and cucumbers, but since that’s not in season here I used chopped yellow zucchini instead. Lots parsley, cilantro, mint, green onions, and lemon gave it the expected flavors of tabouleh.
I always like vegetarian dishes like this Portobello Shawarma, but these mushrooms actually caught me by surprise. The spices, garlic, and vinegar gave the mushrooms incredible flavor. They would have made a fantastic sandwich filling and were a fun topping for pita chips. The tabouleh was as fresh and bright as ever but just a little different with quinoa instead of bulgur wheat. It’s inspiring to see new takes like these on traditional dishes, and the results are delicious.

Is breakfast the most likeable meal of the day? I think it might be. Or, maybe I’m just a really big fan of eggs and the myriad ways they can be prepared. So, the new book Egg Shop: The Cookbook, of which I received a review copy, was sure to be a winner to me. It’s from the New York City restaurant that came about because of a love of egg sandwiches. And, there’s even more to like about this book and restaurant beyond the breakfast menu. There’s a real commitment to best-quality ingredients and a made-from-scratch approach. Of course, you can choose how many items you prefer to make yourself rather than buy, but all the recipes are here for the breads and rolls, cold-press coffee and chai concentrate, nut milk, homemade bacon, pickles, aioli, flavored oils, and more. The recipes range from indulgent to lean and nutritious. After a chapter that covers basic egg cooking and some classic ways to use those cooked eggs, there are sandwiches, bowls, California-inspired dishes, snacks and sweets, and drinks. Did I mention that everything in this book looks like something you’ll love eating? It does. I’ll be trying the Egg Salad Sandwich made with yogurt in the egg salad rather than mayonnaise. This sandwich is layered on multigrain bread with sliced tomato, baby greens, and an optional piece of boneless fried chicken. The Duck Confit Banh Mi topped with a sunny side up duck egg and the Cognac-Cured Gravlax sandwich on seeded rye are two others on my to-try list. On the lighter side, the Warrior One bowl is composed of sweet potato and broccoli salad, Masala lentils, sliced almonds, onion chutney, and a poached egg. And, from the California-inspired dishes, I’m always drawn to Huevos Rancheros. Here, it’s made with Black Bean Smash, a homemade Salsa Ranchera, crispy blue corn tortillas, and salsa-basted fried eggs. Every recipe has considered components lending great flavors and special touches that seem to guarantee deliciousness. I knew the smoked whitefish sandwich would be a savory thrill with all the parts that come together for it.
First, the sandwich is built on an “everything” biscuit. The toppings from “everything” bagels are here applied to a buttermilk, drop biscuit. The biscuits are baked until a few minutes from being done, and then they’re pulled from the oven, given an egg wash, sprinkled with the toppings, and put back in the oven to finish. That delayed topping procedure prevents any burning of the onion flakes, sesame seeds, etc. The smoked whitefish spread was full of big flavors and several things that could be homemade or not. The whitefish was skinned, boned, and flaked. Rather than making a caramelized onion aioli from scratch, I caramelized some local leeks and added them to store-bought mayonnaise. Also, rather than making my own hot pickles, I used a locally-made, spicy, fermented pickle. For the caperberry mustard, I chopped some rinsed and drained capers and added them to Dijon mustard. The other ingredients in this spread were minced green onion, chopped celery and leaves, zest and juice of a lemon, and a pinch of cayenne pepper. To build the sandwich, biscuits were cut in half and spread with the whitefish mixture, sliced tomatoes were added, a fried egg went on top, and a sprinkling of dill completed it.
I can assure you this sandwich did not disappoint. The everything biscuit will be the kind of biscuit I bake most often from now on. It made an excellent delivery system for the smoked whitefish schmear and all its tangy, bright flavors. Perfect, local, summer tomatoes and a fresh farm egg rounded the experience. Having breakfast for dinner will come in handy with so many more egg dishes I can’t wait to try.

When fresh corn is in season, I usually do nothing more with it than pull off the husks and silks and boil the ears. Simple corn on the cob is hard to beat. But, I had this little number waiting patiently on my Recipes to Try board on Pinterest. It’s from last September’s issue of Bon Appetit, and the recipe is online. It’s like a risotto except that it’s made with farro instead of rice. The fresh corn is used in two ways in the dish. First, corn kernels are cooked with onion in a vegetable broth and then pureed. The puree is stirred into the cooked farro to give it the lovely texture of a risotto. Second, more corn kernels are cooked with chopped bell pepper and tomatoes for a pretty topping for each serving. Adding to that risotto-like texture is grated parmigiano cheese that melts into the tender farro. I can’t believe I’m going to suggest this because when do I ever turn down cheese especially parmigiano, but the corn puree is so flavorful all on its own, you could easily skip the cheese and make this a vegan dish. It was light and more clearly about the corn with just the puree, but with the cheese there was added umami, of course, and richness. Either way, you can’t go wrong.
The first step is to cut all the corn from three or four ears. Chopped onion was cooked in olive oil in a saucepan until translucent, and then one and a half cups of the corn kernels was added with some salt. When softened, vegetable broth was added and left to simmer for about 20 minutes. After the broth had reduced, the mixture was allowed to cool before being pureed and strained through a sieve. Meanwhile, the farro was cooked in vegetable broth and water until tender and then drained. Next, finely minced onion, and I added minced garlic as well, was sauteed in olive oil in a large skillet. Diced bell pepper and the remaining corn kernels were added. Going back to the cooked farro which was returned to a large saucepan, the corn puree was added while stirring. Grated parmigiano cheese was then stirred into the farro, and if it seems dry at all, more vegetable broth should be stirred in as well. Last, chopped tomatoes and basil were added to the corn and bell pepper saute, and that mixture was spooned on top of servings of farro. More parmigiano and basil were used as garnish.
This is a deceptively healthy dish given the hearty nature of risotto or farroto. The chewy whole grains of farro and all of those summer vegetables don’t come off as so prudishly good for you in this format. It was well worth taking an extra step or two in prepping that fabulous, fresh, summer corn.
If you have any questions about what to do with late summer eggplant, I have the answer. Make this fragrant, delicious spread and enjoy it with some flatbread. This was in the Paula Wolfert article in the May issue of Food and Wine. Then, I saw these double tomato flatbreads on Yeastspotting a few weeks ago, and the two seemed to belong together. The eggplant is cooked whole on top of the stove, and then the meltingly tender flesh is combined with garlic, olive oil, canned, diced tomato, fresh herbs, and spices. This is a mixture that I knew would be a good one, and it smelled fantastic as it cooked, but the flavor was even better than I anticipated once I tasted it. I imagined there would be leftovers for lunch the next day, but the entire bowl was emptied quickly. I’m hoping to get a couple of eggplants at the farmers’ market this week so I can make it again but as a double batch this time.
I used a dutch oven which was heated on top of the stove, and the big, one and a quarter pound eggplant was pierced and placed in it. It was covered and left to cook in the dry pan over low heat for 40 minutes. The eggplant was turned after 20 minutes. Then, it was placed in a colander in the sink and cut down one side so it could drain. Once cool, the flesh was scraped into a large skillet, and minced garlic, tomatoes, olive oil, parsley, cilantro, paprika, cumin, and cayenne were added. This was cooked until the liquid evaporated, and then lemon juice was squeezed into the mixture.
Making the flatbreads couldn’t have been easier. I wasn’t able to find the suggested tomato powder for the dough, so I used tomato paste. That was combined with flour, yeast, sugar, salt, and paprika in a food processor. Water and vinegar were added while the processor was running. Sun-dried tomatoes were added and pulsed to combine, and then the dough sat in the food processor for about 30 minutes. The dough was divided, rolled into rounds, and quickly cooked in a hot cast iron skillet until it bubbled and was browned. We did have a few pieces of bread left over because this made eight pieces, and they freeze and re-heat nicely.
Any flatbread would work fine here, and if I don’t have time to make homemade flatbread next time I’ll probably buy pita to go with it, but this tomato bread with bits of chewy sun-dried tomato was a very good match. The cumin, cayenne, and paprika in the eggplant added depth of flavor, and the herbs and lemon perked it up well. I could have made a meal of just the eggplant and flatbread, and with a few olives on the side and a glass of wine, it’s a great way to enjoy summer coming to an end.
The problem with ignoring my ever-growing stack of new recipes to try is that eventually some of those recipes fall out of season. I can either wait until next year, or I can convert the dish into whatever works right now. This couscous dish is from the April issue of Vegetarian Times, and it was originally called Israeli couscous with saffron, olives, and spring vegetables. A simple swapping of eggplant and zucchini for the suggested peas and fennel made it all about late summer. The great flavor in the dish comes from finely chopped leek, wine, and saffron. This was a rare occasion in which I found myself with pasta and no cheese in sight, but I realized that’s perfectly fine when saffron is involved. The kalamata olives and fresh basil garnish gave it an added boost that also kept me from missing any cheese. Although I definitely didn’t serve the leftovers in stacks formed by a ring mold, I copied that presentation from the magazine photo for our first meal with this dish.
Once all the vegetables are chopped, this dish comes together very easily. While chopping, the water can be coming to a boil for the couscous. Leek, eggplant, zucchini, and garlic were sauteed in a large skillet as the couscous boiled. White wine was added followed by the cooked and drained couscous, diced fresh tomatoes, and saffron. Last, arugula leaves were added, seasoning was adjusted, and it was covered and left to sit for a few minutes. I formed stacks, but it could have been served in bowls, and it was topped with halved olives, basil chiffonade, and a drizzle of olive oil.
The saffron perfumed the dish well, and the fresh, seasonal vegetables were at their best. The chewy couscous was just a tad smaller than the diced pieces of vegetables, and the wilted arugula wound its way throughout the pasta. The olives were a great touch on top, and you should use your favorite kind here, and that goes for the olive oil that’s drizzled at the end too. Simple but fresh and flavorful, this is a dish I’ll keep modifying from one season to the next.
I’ve been eating a lot of delicious, fresh, raw tomatoes this summer. I joked that I could eat caprese salad every day, and then have pretty much done just that. I keep bringing home fresh mozzarella and heirloom tomatoes and plucking leaves off my basil plants. It’s a perfect combination, but I finally decided to change it up and do something else with tomatoes. I had this recipe for warm tomato dressing from Living magazine from last year, and it’s a versatile sauce. It can be made in advance and then re-warmed for serving. In the magazine, it was shown as a topping for roasted fennel, and that’s how I served it. It would also be great with chicken or over polenta or with other roasted or grilled vegetables. I used some pretty, little pear tomatoes but any kind of cherry-type tomatoes will work great. They’re cooked with wine and balsamic vinegar and take on a sweet and tangy flavor.
I have to confess that I didn’t read the recipe very carefully when I was writing up a shopping list. I skipped right over the word ‘red’ next to wine in the ingredient list. When I started cooking, I realized we had no red wine in the house, and I had to use white wine instead. As you can see in the photos, the dressing still became a deep, red color from the balsamic vinegar. So, to make the dressing, the tomatoes were cooked in a skillet with a little olive oil for a few minutes, and then garlic, wine, and balsamic vinegar were added and cooked until the liquid was reduced by half. A little splash of red wine vinegar and salt were added at the end, and sugar was to have been added as well but I skipped it since I thought the sauce was sweet enough. To serve, I spooned the warm dressing over wedges of roasted fennel.
The mellow, roasted fennel was a well-matched vehicle for the tomato dressing, and the reduced and intensified balsamic and wine gave the dressing a nice, agrodolce kind of flavor. Of course, I’m always looking for ways to add spiciness, and I think some crushed red pepper would be an interesting addition here. I’m glad I tried something new because those heirloom tomatoes won’t be around much longer, and I needed to start kicking my caprese habit. And, this kind of cooked dressing could even be made with canned tomatoes later in the year.
I was invited to attend a class taught by Chef David Bull at the Central Market cooking school, and the topic of the class was vegetarian dishes and wine pairings. David Bull doesn’t usually focus on vegetarian cooking as you can see in his dinner menu at Bolla at the Stoneleigh Hotel in Dallas, but he’s always happy to prepare vegetarian tasting menus upon request and there is always a vegetarian option or two on his menus. During the class, Bull spoke about textural contrast in food and recognizing ingredients for inherent flavors and balancing them. He also demonstrated some interesting knife techniques like holding the handle up and the point down when slicing avocados to prevent the slices from sticking to the blade. He created seven dishes for the class: avocado mousse with sprouts jicama jalapeno and grapefruit, cucumber summer rolls with yellow curry and coconut, white gazpacho with red grapes soy milk and toasted almonds, tomato and watermelon “tartare,” watercress salad with Texas peaches and buttered brioche, daikon noodles with green beans, and potato gnocchi with oven roasted tomatoes and black olive oil. This fall, Bull will be opening two new restaurants in Austin. Congress will be a fine dining, dinner-only restaurant, and Second at Congress will be a more casual spot with patio and terrace seating serving brunch, lunch, and dinner. Connecting the two will be Bar Congress serving appetizers and cocktails. Bull mentioned he’s working with farmers to determine how much of the menus can be sourced locally. You can also find Bull’s cuisine in an interactive format. His online cookbook is called Bull’s Eye on Food, and you can search recipes by title, type, or ingredient. Once you choose a dish to prepare, you can enter the number of people you’ll be serving, and the quantities in the ingredient list will be re-calculated for that number. It will also generate shopping lists and even send the list to a smart phone. The other nice interactive feature of this book is that new recipes are added all the time. The vegetarian dishes prepared for the class were added just after being presented.
I sampled and enjoyed all of the dishes from the class, although the wine pairings didn’t uncover any new favorites for me. The white gazpacho was surprisingly good because of how well-balanced it was. I expected something a bit on the sweet side, but instead it was crisp, cool, a little tangy, only slightly sweet, and was delightful with the almonds on top. The cucumber rolls were fresh, crunchy, and light. I considered making those with some added stick-like pieces of tofu. And, the watercress salad with peaches and buttered brioche with a peach puree and red wine vinegar sauce was outstanding. That would be a beautiful brunch dish. Last, I was thrilled to watch the gnocchi being prepared as I’ve lived in fear of attempting to make it myself for so long. I think I’m almost ready to try it now. But, the dish I had to try right away to make at home was the tomato and watermelon "tartare." It was summery and brightly-flavored with hints of savoriness from shallots and red onion. The goat cheese dressing was delicious as was the pistachio vinaigrette, and when the two were swirled together with a bite of the tartare, it was excellent.
While demonstrating this recipe, Bull explained that he was including chef’s techniques and that a home version could be simplified. I chose to make a simplification or two; I admit it. I didn’t bother preparing the tomato concasse. I left it unpeeled and just seeded it. I did make the watermelon rind pickles, but my julienne on them and on the celery pieces could have been thinner. I was happy with the ring-molded shape of the salad, and pressing excess liquid from the contents of the mold, as instructed, is necessary for it to hold together well. Then, it’s very pretty on the plate with a sprinkling of chopped pistachios and the dressings drizzled here and there. The complete, chef-version of the recipe is below.

tartare: 3 heirloom tomatoes
1 1/2 c seedless watermellon, small diced, rind reserved for celery salad
1 tablespoon shallots, brunoise
1 tablespoon extra virgin olive oil
2 teaspoons red wine vinegar
2 teaspoons parsley, finely chopped
1 teaspoon sea salt
-prepare the tomatoes concasse by blanching them, shocking them in cold water, peeling the skins, seeding them, and then dicing them.
-in a small mixing bowl, combine all the ingredients and season with salt
pickled watermelon rind:
1/2 cup watermelon rind, peeled and all red fruit removed, julienned
1/4 cup champagne vinegar
1/4 cup sugar
-combine the vinegar and sugar in a sauce pan and bring to a boil. reduce mixture by half and chill completely.
-pour the chilled mixture over the watermelon rind in a bowl and allow to sit for 20-30 minutes.
-remove the rind and drain the liquid. reserve the rind for the celery salad.
celery salad: 1 cup celery hearts, loosely packed
1/2 cup celery, finely julienned
1/2 cup pickled watermelon rind
1/8 cup red onion, fine julienne
2 teaspoons extra virgin olive oil
1 teaspoon sea salt
-in a small mixing bowl, combine all of the ingredients.
goat cheese dressing:
1/2 cup goat cheese, crumbled
1/3 cup water
1 teaspoon sea salt
-mix all ingredients together in a small mixing bowl until completely. should be the consistency of yogurt.
pistachio vinaigrette:
1/4 cup pistachios, toasted, salted, and ground
1/2 cup extra virgin olive oil
1 teaspoon sea salt
lemon juice, to taste
-toast pistachios in a 350 degree F oven for about six minutes. remove from oven, season with salt, and grind them in a food processor until finely crumbled. reserve some ground pistachios for garnish.
-mix the remaining pistachios with the rest of the ingredients in a small mixing bowl until completely combined.
assembly: -place the tartare into ring molds and press with a clean kitchen towel (or paper towel) to release some of the juice. unmold the tartare onto plates.
-top tartare with celery salad and toasted, ground pistachios.
-drizzle the goat cheese dressing and pistachio vinaigrette around the plate and serve.
A pesto recipe is like a scone recipe for me in that every time I see one, I have to try it. In defense of my sanity though, pesto is a very versatile sauce. It goes well with pasta, smeared on a sandwich, drizzled over vegetables, and could even be a dip. Not only are there many uses, there are also many ways it can be made. In the July/August issue of La Cucina Italiana, there was article about pestos with several recipes which I could not resist. A lemony pesto made with olives was used as a dressing for sea bass crudo on a bed of baby lettuces. I stole the pesto part of that dish and used it instead on a layered salad of raw zucchini and yellow squash slices with fresh mozzarella. Then, I also tried the pesto with two tomatoes which was used as a sauce for spaghetti. That recipe isn’t available online, so I’ll include it below.
To make the pesto di limone, two wide strips of lemon zest were pureed with the juice of a lemon and some olive oil. Then, I was supposed to have used Taggiasche or Gaeta olives, and had I found some green Taggiasche olives the pesto would have been nice and green. Since I used black Gaeta olives, mine was a darker color. The pitted Gaeta olives and two big cups of basil leaves were added to the blender and pureed with the first three ingredients. This resulted in an intentionally thin pesto with a fresh, lemony flavor. The pesto with two tomatoes was just as simple to prepare. First, sun-dried tomatoes, olive oil, and rinsed and drained salt-packed capers were pureed in the blender. Then, cherry tomatoes, and I found the prettiest dark red, almost purple cherry tomatoes, were added, and it was pureed together until smooth. That pesto was transferred to a large bowl, and grated parmigiano reggiano and chopped chives were added.
The tomato pesto required one half cup of olive oil, and I know I’ve used a lot more oil than that in similar quantities of pesto. Yet, the smooth texture gave it a richness that made it seem more decadent than it was. Of course, the flavor was nicely layered with fresh, juicy tomatoes and the depth of sun-dried tomatoes, and the chives lent just enough bite from the allium family. Both pestos are keepers, and I’m sure I’ll think of different ways to use them each time they’re made.
Pesto ai due Pomodori from La Cucina Italiana July/August 2009 1 c drained oil-packed sun-dried tomatoes ½ c extra-virgin olive oil 1 t salt-packed capers, rinsed, soaked in cold water for 10 minutes, then rinsed again and drained 2 c cherry tomatoes 3 T freshly grated parmigiano reggiano 1 T chopped fresh chives
-using a blender, puree sun-dried tomatoes, olive oil, and capers; add cherry tomatoes and puree until smooth -add one to two tablespoons water to help blend if needed -transfer mixture to a bowl and add grated parmiginao reggiano and chives and stir to combine
*Note: This quantity of pesto was used to sauce one pound of spaghetti.
I’m not sure why it worked out this way, but we had a seafood-focused weekend. We had some fantastic sushi at a neighborhood place for lunch on Saturday. We drive by this place all the time, but we’ve only stopped in a few times. We always leave happy, the fish is always the freshest, and it’s always perfectly prepared. Once again, we reminded ourselves we should stop there more often. After a lunch including salmon, tuna, crab, and shrimp, we moved on to mussels and salmon for dinner. It was a perfect food day for me. The eggplant salmon was another dish from Happy in the Kitchen by Michel Richard. All of the dishes in the Shellfish and Fish chapter are enticing, so I just picked one of the simplest to prepare.
Salmon fillets were cut down the center so as to accommodate a stuffing of eggplant and fresh mozzarella. The Japanese eggplant was first thinly sliced and sauteed with garlic and just a touch of soy sauce. Once cooled, it was tossed with cubed mozzarella and chopped garlic chives. The salmon was filled and then baked until the stuffing had heated through. The components of this were so simple to prepare but so delicious together. The sauce was just as easy. Chopped onion was cooked with chopped tomato. I know what you’re thinking. With eggplant and tomato, this sounds like a summer dish. Fair enough, but we do get pretty good locally, organically, greenhouse-grown tomatoes here, and since it was cooked with the onion for 15 minutes, it worked out fine. For this sauce, canned whole tomatoes would work too. The sauce was supposed to have received some basil after being pureed and strained, but I used a combination of homegrown parsley, thyme, and oregano instead. The tomato sauce was pooled onto the plate and topped with the salmon.
It all worked incredibly well together, but we also soon realized the stuffing would make an excellent vegetarian dish on its own. After filling the salmon, there was extra stuffing which I baked in a small dish. That alone would be lovely served with the tomato sauce. The sauce delivered brightness and incredible flavor considering the very short ingredient list. With the mozzarella melted into the buttery salmon, the tender eggplant made flavorful with garlic and soy sauce, and the smooth tomato sauce, this was a great finale to a seafood day.
Once again, I collected some excellent produce from my CSA share and the farmers’ market yesterday. I have a lot to work with for the next few days and several ideas for experiments. Last night, I invented a cucumber salad as follows:
1 organic cucumber quartered lengthwise and then sliced into 1/4” pieces 1 large, salmonella-free, organic tomato chopped 1/4 organic red onion, thinly sliced 1 organic cubanelle pepper, seeds and ribs removed, chopped 1 t dijon mustard 1 T sherry vinegar 2 T extra virgin olive oil 3 T homegrown, organic basil chiffonade Brazos Valley Marinated Feta to taste Salt and pepper to taste

Something was a little off when we tasted the salad. I really need to taste ingredients before throwing them into a dish! The cucumber had an odd, bitter taste but only on the skin. As we ate the salad, we cut the cucumber skin away on each piece, and then it was fantastic. This morning, I did some searching and found info on bitter cucumbers. The pepper, tomato, and onion were fresh and perfect, and once the skin was removed the cucumber was also great.
The feta is locally made and is not sold in retail outlets as far as I know. As I strolled through the market yesterday evening, I was stopped and offered samples of plain feta, pepper jack, and the marinated feta. It’s all really delicious. The marinated feta worked very well in the salad. Tweet
